Symbol Fill: Symbol name always crashes
To start with the basics, you're probably not wanting to use the Symbol fill at all. It is a very ancient way of filling with symbols, and only gives a very regular pattern. You're probably want to use Draw -> Symbols in Area instead.
Not sure about the crashing, but I am able to reproduce it, so I'll bring it to the attention of the developer. But this fill type is likely to go away in the future, so a fix is likely to be lower priority.

Having trouble with drawing tools in DD3
Whether it displays the "Add Corridor" tool or the "Select Drawing Tool" dialog depends on which menu bar is used. When SS4 was released originally, it was before the DD3 tools were added as a standard part of CC3+, so it came with it's own set of toolbars so people could use it with the standard drawing tools even if they didn't have access to the DD3 commands.
Now, the reason your add corridor tool looks rather bare is because this tool doesn't automatically populate based on the style, you have to just pick appropriate options yourself. It is blank like in that screenshot, it is because the last fills that were picked are not defined in the current map, so it just displays blank, but you should be able to use the dropdowns to pick appropriate fills from the current map.

Vintyri, CSUAC, et cetera
You're talking about new versions of the 3rd party CC3+ addons, which seems to indicate you already have (some) of them installed? If so, how old are your installs? While there have been some minor updates released, these have been mostly to fix certain issues, the collections haven't changed in a long time.
If you have one of the very old versions of the CSUAC, then it is probably best to remove that one before installing the updated version. It is not absolutely required, but it saves you from potential confusion in the future. But a clean install shouldn't be required.
However, you may want to make sure that it is your installation and not the map that is the problem. If it is an older map using the old version of the CSUAC, then maybe you already have the newer version, and reinstalling isn't really going to help you with anything.
