Shadows! How do they work?
Shadows are applied to all entities on the sheet with the effect. If you need some walls to not cast shadows, you need to place them on other sheets.
Note of course that you can have all your walls on a non-shadow sheet, and then just double up with a new set of walls on the shadow sheet so you don't have to break apart the rooms. The "walls" casting shadows could actually just be thing black lines on a dedicated sheet.

CC3+ Re-Install now Symbol colors are off
I am guessing you had a custom palette file (fcw32.pal) in your old CC3+ data directory? If CC3+ finds such a file, it will use it instead of the default palette. In your new install, you won't have this file, so it is now using the default palette (could theoretically be the other way around too, that you didn't have such a file before, but now have copied in one in the new install)
In general, custom palette files are bad, because they affect every map you load. Palettes should be attached to the drawing instead (from the drawing presets dialog), this allows you to have custom palettes on a per map basis.

Maps on demand
Nothing wrong in asking. There are a few people here that sometimes do commissions, so maybe someone will take you up on it, but there's no guarantee anyone will, this community isn't much focused on commissions.
I would rather recommend you pick up the program yourself if you haven't already and have a go at it. Much cheaper in the long run :)
