I have a lot of annuals and add-ons. If I remember correctly, once we get the annual bundle, we cant install just say, one or two of the styles?

If you mean the end of year installer that contains all that year's annual issues (12-13 separate issues), then no.
All your favourites should be easily picked out of the list of templates in the New Map Wizard. Are you having difficulty finding things?
I find I have standardized my maps to just a few styles. So the lists are a bit lengthy.
And I was going to do a re-install. No sense installing what I never use.
Unfortunately, you can't install bits of things from an installer. It does what it does.
However, if the list is a real pain for you, maybe it would help to keep a separate folder of blank new maps for each of the styles you prefer, so that you can start by opening one of them each time instead of using the New Map Wizard. Use Save as... to generate a copy of that 'master' file, so it's there for the next time, and so on.
You can use RESIZE to alter the size of your map before you start drawing. You don't have to use the New Map Wizard if you don't want to.
I was considering going into the file structure and deleting the appropriate folders, but your idea is better.
And by leaving them, I could import symbols or fills that I like fairly easy.

I really wouldn't recommend messing with the installed files and folders.
If you are comfortable with the Windows command line and making NTFS file system links, you can make a new folder (say "Favourites") under @Templates, create a Wizard folder inside of it, and inside there add NTFS links to the relevant template files (you'll need to link all three files for each template, the txt, the fct and the png). This way you can build your own custom list without touching the existing files)
