So I understand it, why does the scalebar text behave differently when I open the files on my machine? It is somewhat enlarged - for instance it actually touches the scalebar and the map border.

The first one is at a lower magnification in CC, the second at a higher.
(This is a great learning exercise for a dabbler like me. So far, I've had to think about stuff like symbol scales, sheet and layer placement, outputting from CC. It's like a live version of a CC manual/TOUM exercise).
Two reasons that I can think of: - Are you running CC3+ under Wine/Crossover on Linux/Mac? There is something that happens there with font metrics causing some issues - It can also happen if you don't have the right font on your computer, forcing CC3+ to find a replacement. Doubt that is the case here, since the font is Times New Roman.
How about this for a convoluted scenario - due to social distancing my partner is working from home, and she is using the desk where my Windows machine is. I am remote desktopping into the Windows computer (now shoved into a corner and without a monitor) using my Mac. Could that do it?
It might, remote desktop do import some options from the local machine, and for performance issues, many things are actually rendered on the local machine, so I guess it is possible. Just my guessing though, haven't tried out that particular scenario. Guess you can test that theory the next she moves by trying the map locally on your windows machine.
That's the fun part about just giving a basic challenge without detailed instructions. It is up to the mapper to decide what to do, which is often completely different from what you imagined when giving the challenge.
Here it is. I have reduced the size of the trees somewhat, but they are still a bit big for the mountains - still, I guess they are symbolic. I stuck to the Jon Roberts style
