Is there a way to select a poly filled area and replace the fill with another style?

Go to FS on upper right of CC3+ and click on it.
Click the Bitmap files tab.
Scroll down and select one.
Click okay.
The fill will then change to the new one.
You might hide and freeze all layers that you don't want to change first.
Monsen's suggestion shows you how to change the fill style of existing objects. Select Change Properties, select the edge of the area, right click, Do It, then pull down the list of fill styles.
The easiest way to do this is to first just start a new blank map in whatever style contains the bitmap fills you want. Then, in the old map, use Draw -> insert file and pick the new blank map to insert. Once you have the new map on the cursor ready to insert however, you can just press Esc to stop inserting. This results in the fill style definitions being copied over, but the map itself isn't inserted. Now you have access to the raster fills from that style.
You can also convert the whole map over. If so, it is probably easiest to just copy the entities from the old map over into a new blank map with the desired style, and then use Change Like Draw Tool to bring the entities into the new style.
