I watch this show fairly often. They look at a satellite photo and try to figure out what is going on there. They don't always figure it out.

Sometimes they send someone, or ask a local geologist or archaeologist, to go look at it.

Ancient ruins, 1800s abandoned buildings, concrete highways in the middle of a jungle, etc. While not every thing they discuss would work for mapping, some of it is very useful.
