Pacific-Centered Earth Map - How?

How would one go about taking an existing earth map, preferably using GTOPO or other-real-world data, and shifting it to center on the Pacific Ocean similar to here? In addition, how would one invert that same map, preserving GTOPO data?

    I guess it depends on what you are going to do with it, but for simple view/export reasons, just drag a bit in the globe in the upper left to change the current view center (which is used during export). In the Change Projection dialog, you can also specify the center of projection. In the dialog where you specify the parameters when you import the ETOPO5 data, you could also set the map edges to go from -180 to 180 (instead of 0 to 360), that will also accomplish this.
    As for inverting it, I don't know how to do that in FT3, but if you are planning on taking the data into CC3+, you can just mirror it there after importing.
