The rivers and lakes need a little work jus tot make them look more organic.
Questions: Are all the mountains supposed to have the paths through them?

Yes the roads should go through the hills / montains

I used the above method for my rivers in the Niflheimr map.
I also used it recently in The Shrouded Isle, Dauksunyi, and Perinusa maps.
It all comes down to personal tastes really.

PS: Where in Germany? I have lived in Bamberg, Frankfurt, Mannheim, and Stuttgart.
