FT3 - how do I fix these land issues?

FT is a pretty amazing piece of kit and really helping me out, but run into a reoccurring problem. I'm a newbie - using the program 'out of the box' , trying to work stuff out, so hoping this has a simple solution to experienced users.
In the attached image I'm trying to make 1,3 & 4 like 2
1: I was playing with raising land , actually trying to make a lake of a certain shape, and then ended up with a variety of mountains nasty contrasting altitudes I didn't want.So I wanted to get back to square 1 and to just level this area to something like 2 and start again, but all I can seem to do is have either what you see here, or the opposite and huge white mountains.
2: the desired attitude for other areas or as a 'clean' starting point.
3: I want to get this like 2 as well, but if I use rougher ground and have it set to raise - it actually lowers! - and sometimes inverts other surrounding areas.
4: this happens sometimes when I raise land from the sea, I get these ridges and can't seem to even it out to be like 2. I get similar problems to 3 when i try to fix it.
what I would like is to do something like the clone type tool in Photoshop - be able to select a source area I like and for FT to mimic it's altitude ( a similar look is fine, I don't need an exact clone) , when I paint over the area I want to replace.
OR, use the selection tools and level everything inside it so it ends up like 2 so I can start again - Is there some way of doing that?
OR, set a brush to be between certain altitudes - and it will keep to that where ever I draw. I get the feeling I'll need to input altitudes and play with it, but it's not really clear, I'm going to explore this idea next
when I first saw the presets I was expecting to see something there to help, but it's just for making your own presents. If there were Pro Fantasy ones available as default to set all ground within a selection to a x number of heights that would be really helpful too. e.g - common ground smooth, common ground rough (like my #2 below) ,hills, mountain, lake - I can play with the brush tools values for the rest - it would speed up my mapping. if you know of good settings for these, please post and I'll make presets.
A lot problems I encounter would be solved if I could just level a selected area to a neutral attitude and rework it from there.
Also, while I'm here :-) , being able to have smaller brushes than the 1 setting would be helpful too. When you zoom in and it snaps to the grid, it's rather big and clunky. Again PS/gimp style brushes would be cool.

To wipe a selected area back to the original FT values, use Tools>>Global Set>>Land Offset Edit with a value of 0 and Tools>>Global Set>>Land Roughness Edit with a value of 1.
Oh yeah, I've seen that tutorial before, but forgot all about it- doh! Also I did try the Global Set after reading about it in another thread , but it didn't seem to give any results (it's kind of how I got to 1) - I must have been doing something wrong, so I'll try again with your recommendation.
