Does anyone know of a computer program, perferably free but I can afford a bit, that makes different types of galaxies ?
The program Terraformer_Author mentioned has it disabled for the shareware version and the program isn't available for sale right now.
I just need something I can use to add galaxies to my Crestar star maps.

Are you looking for actual galaxy symbols, or are you looking for something that can generate a huge number of stars and star systems? I'm not sure about galaxy symbols, but I've been using a great little program called AstroSynth, by NBOS for my SciFi needs for years. It isn't free but it's only $35 U.S., and it has a fully-functional 14-day free trial. It has a boatload of features, including generating systems and HTML catalogs on the systems. I'm not sure if it's what you're looking for but you may want to give it a look-see.

Ones like a giant silver dollar made of stars, a platter of stars. They don't have to be smudges of light.

You could look through the NASA astronomy picture archive -- there are a lot of galaxies you could choose from, with varying detail:

But... if at all possible I would to create my own galaxies. To use real ones seems kinda cookie cutter to me.
