Items on hidden layers won't be deleted (can't be selected). Hide all the layers except for the ones that contain what you want to delete. Assuming that you want to delete *everything* on those layers, zoom extents, click delete and select everything. Otherwise there are all sorts of selection filters for picking and choosing what you want to delete.

i draw a bit of map, save as filename001, do a bit more, save as filename002, etc. I keep this up until done.
If i decide I don't like the finished map, I can go back to a nearleir version without deleting anything.
How often you save is up to you. I save before and after each step. Draw a land mass, save as, draw roads, save as, etc. If i have many roads, i save as during that step.
1.As Old Guy says, Hide the layers you don't want to delete, then erase any entities you want.
2. Erase, right click, select by Type and check Symbol Reference. You can use CTRL+click to deselect anything you don't want selected. This is a very powerful feature, but it's quite involved. See Selecting Entities in Help, and look at" Advanced selection options" under the Editing tab.
3. As Joachim says, if you want to erase all instances of a particular symbol, use the Symbol Manager and CTRL and click to select symbols you want to remove, then delete.
For examples:
- Click the Erase button.
- Right-click on the Map, choose "Layer".
- Right-click and choose MINERALS/MOUNTAINS, Click Okay.
- All your mountain and hill symbols should now be selected. Right-clicking and choosing "Do it" will erase all of them.
Hope that helps.
