Editing a full symbol catalog

Is there a way to edit all of the symbols in a catalog?
I have a catalog generated by "Font to Symbol". There are 55 symbols in the resulting catalog. I would like to change them all to vari-color, in as simple a manner as possible.

You can do Symdefs to Sheets from the Symbols menu. That turns all the symbols into sheets in the same drawing, making it easier to edit multiple symbols at once.
OK, I vaguely remember doing that the last time (10 years ago).
