  A simple way would be to put what text you want hidden on it's own layer. Then simply hide that layer.

  The other way is to put different texts on different sheets.
  Why do you want to hide some text ?
  If it is to produce diverse maps (ie player map/master map) use layers.
  If it is to work on the map and show all at the end I'd go with sheets.
