Is there a TUT on how to create symbols? If so, please point me in the right direction.

Your best bet is to get the "Tome of Ultimate Mapping." It also tells you how to do everything else.

They Tutorial Page has a PDF you can download that shows how to create a symbol catalog from PNGs.
