Outlined roof ridge

On the house command, is there any way to make your roof ridge outlined?

What I mean is I want a light brown roof ridge, but I would like a darker outline to match the roof symbols included with SS5.

Yes. In the house settings dialog (Right click House

-> Select House Settings) there is a checkbox in the Outlines section down in the bottom right called 'Ridges'.
You don't have too much control over it's appearance however, it will always just be a thin line of the color you specify.
