Best Style to match these maps (specifically land/water fills)

Novice map maker here (have lots of Illustrator and Corel vector layout experience, but nothing like this) and am looking to pick up CC3+ and a couple Annuals.
Is there a good style that comes close to replicating the feel of either of these maps:

I love the fills being used for the land/water (though I suspect the 2nd map is far more than one bitmap) and would enjoy creating maps in a similar vein.
Anything in particular I should take a look at? If not, any tips?
