Splitting a continent into countries

For the life of me I can't find any way to split a continent up into countries with different land styles. e.g. Three countries, one is a plains land, one is mountainous with no plantation, one is a desert.

Best way to do this would be to use the terrain drawing tools to draw the terrain for your countries.
