Changing color on symbols

So we are starting to map out our forest area which goes into our first two books. I get how to change a symbols color like a tree or a mountain via the varicolor option but how do I do so if the option is not available?

If a varicolor version of a symbol isn't available, you'll need to edit image file for the symbol in an image editor (make a copy, don't edit the original) if you need to change the colors.
