I made the jump and upgraded my software. Do I need to uninstall my CC2 Pro and DD Pro first?

No you don't. CC3 installs itselt in a brand new folder.

Then after CC3 is installed, can I/should I uninstall CC2 Pro?

You can, but there is no need to.
If you use addons that haven't been upgraded to work with CC3 yet (Like the source maps products), you may want to keep CC2 around for using those. If you only use addons that work with CC3, there is probably no reason for you to keep CC2 around.
