How do you exchange one kind of icon for another for a whole map? (For instance, one door symbol for a door symbol from another catalog). My players prefer one kind of door over another.

Symbols -> Symbol Manager
Pick a symbol.
Hit the replace button.
Close the symbol manager and redraw the map to see the change.
