exploding symbols

I've seen maps where people have 'exploded' symbols to change their properties. (to change the color of a border or the font used in a scale bar for instance) For the life of me I can't figure out how they do that...does anyone else know?

    To explode a symbol you need to use the explode command (it looks like a stick of dynamite) once you have done this there are some symbols that require you explode sectioins again.

    I'll try and post a step by step one later.. atm I have a migraine ;) so heads thumping while it waits for pain killers to kick in
